Blueberry Muffins

This week we made blueberry muffins, and the kids helped! Of course, my picky eater (Blair) told me she just wanted to make them for her brother, CJ. She doesn’t like blueberries?! Who doesn’t like blueberries??! I’m sure some kid at school told her they didn’t like blueberries, so now Blair doesn’t either. She did the same thing with peanut butter. Sigh. I will find a recipe she likes!! Anyway, enjoy this blueberry muffin recipe!

Blueberry Muffins:


2 cups flour

½ cup sugar

2 ¼ tsp. baking powder

1 tsp. salt

1 tsp. soda

1 egg, slightly beaten

1 cup buttermilk

¼ cup melted butter

1 cup blueberries


Combine dry ingredients. Set aside. Combine egg, milk, butter and mix well. Make a well in the center of dry ingredients and pour in liquid ingredients. Stir until moistened. Fold in blueberries. Makes 12 muffins. Bake 425 for 20 minutes. (I would say a couple minutes less 15-20 minutes.)
